S. Pelligrino: Tasting Note
A very dry water. Mineral with fine bubbles and a mellow almost lemony flavor on the back of the tongue. Long, subtle zinging nickel or dime flavor on the front side of the tongue following. Really long with that. Almost like I licked a battery and got burnt. I think it’s the salt. Now I think it’s a calcium salt lick. Maybe it’s metallic flavors are like festive tinsel on a tree, frilly, fun and free with a holiday spirit but not haughty. The spirit of the middle class Europeans, grandparents and a generation who once played in rubble in their war torn country and now who demanding nice homes. A good table water. Might be too zippy for Long Island oyster but not enough acid to cut through the fat of a fried steak. Would go great with mussels and fries. Sweet can of ocean meat like tuna or a tuna salad with crackers would compliment well. Also, I imagine, corn chowder.
